“Cooking Light” #4 Snacks/Appetizers

For a snack/appetizer today we made amazing Sausage Stuffed Jalapeños. Not too spicy but very filling.  If you want the recipe let me know, trust me you want the recipe.

Last night we had a flank steak, with leftover green beans from the night before, brussel sprouts (which are now a staple in our kitchen) and roasted red peppper.  YUMMY :)

“Cooking Light” Day2

So we are on our 4th day of “cooking light” (low carb) and I’ve lost a total of 7lbs! YAY! Tonight's dinner was super yummy, we had chicken sautéed in butter, garlicky green beans, brussel sprouts, and salad.  I never thought I’d be a fan of brussel sprouts, but we have figured out a great way to cook them and me and John absolutely love them! “Cooking Light”

One of my New Years Resolution like most people is to eat healthier so for the last few days me and the hubby have been eating low carb meals which are delicious, don’t know why we didn’t start eating this way (again) sooner! For the next few weeks or for however long we stick to this diet I will be doing a “cooking light” series.  The picture above was our dinner  tonight:  Spicy Beef Stir-fry. So if your interested here is the recipe:

Ingredients:
-1 1/2 lbs beef, thinly sliced
-2 cups snow peas
-8 green onions,sliced into 2 inch pieces
-2 tablespoons olive oil
-1 tablespoon chili powder
-3 cloves garlic, chopped
-dash of cayanne pepper
-1/2 tablespoon soy sauce (we used Kikoman)

Mix together olive oil, chili powder, garlic, soy sauce, and cayanne pepper. In a bowl, mix together snow peas and green onions, add half of the prepared sauce.  In a seperate bowl toss beef and other half of prepared sauce.  In a large skillet or wok over medium heat, cook snow peas and green onions until slightly cooked. Take veggies off heat and put back into bowl. Next cook beef until no longer pink, add vegies back into pan and cook for an additional 1-2 minutes. Finally ENJOY!

This picture is of my little guy playing on a pillow his Great Great Great Grandmother made. Maybe next Christmas I should make a pillow to pass down……. yeah maybe I could do that if I would ever pull out my sewing machine I’ve never opened and use it…… well maybe I could do that if I actually knew how to sew, something else to add to my list of things to do. But maybe….Does anyone know how to sew and want to teach me???? It would be kind of fun to learn, maybe there are classes I could take or something.    DSC_0720DSC_0727

New Year New Me

Wow I can’t believe its 2011! It seems like just yesterday it was  the year 2000, where has time gone? With that said, this year I am resolving to do more with my time.  John David is already 9 months old, the days are flying by so somehow I am going to make them slow down (I wish) well at least make sure I enjoy each day to the fullest.  We spent New Years eve with friends, every year it seems harder to stay awake until midnight, but we did and John David woke up just in time to ring in the New Year with us.  John David has been changing so much in the last few weeks,  he is starting to stand up all on his own, so I guess walking will be next, watch out! Not much going on the next few weeks so this will be the perfect time to start a better daily routine and a fresh start for our daily diet.  I’m thinking about starting a cooking blog, so we will see if that actually happens.  Well I guess that’s all for now.
